The bread was introduced to the Comoros by Omani traders and immigrants. It is the staple bread of the Comoros, and mkatra foutra is often eaten with coconut-based curries, rougaille, or other relishes.
Ingredients:
500g of flour
500ml of coconut milk
2 eggs
1 sachet of active, dried, yeast
Sesame seeds
2 tbsp of ghee (you can also replace it with butter)
Sea Salt
1 pinch of sugar
Method:
Sift the flour into a large bowl. Take a small cup or glass, add the yeast and mix inn a little lukewarm water to form a paste.
Form a well in the flour and break the eggs into this. Add the ghee (or butter) to a small bowl and melt in the microwave. Add this to the eggs and mix into the four. Now add the dissolved yeast mixture and mix in with a fork to combine.
Finally, add the coconut milk into the flour mixture, mixing well to combine before adding a little more. Once all the coconut milk has been incorporated add the salt and sugar. Mix gently to ensure everything is combined and that there are no lumps.
Cover the bowl with a clean cloth then set aside in a warm place to prove for 2 hours.
At the end of this time you can cook the breads.
Place a non-stick pan over low heat. Once the pan is hot, lightly beat the batter to knock it back. Using a ladle lift the first batch of the batter. Add to the pan and scatter over a pinch of sesame seeds.
Cook the batter for 5 minutes then flip over and cook for 5 minutes on the other side. Transfer to a warmed plate, cover with a clean cloth to keep warm as you cook the next flatbreads.
Serve warm as an accompaniment or with honey for breakfast.
