Minted Fruit Kebabs: A classic South African recipe for mixed fruit marinated in lemon juice, sugar and mint cooked on skewers on a barbecu.

Ingredients:

2 punnets strawberries, hulled
1 small papaya, peeled and cubed
1/2 pineapple, peeled, cored and cubed
25ml lemon juice
2 tbsp caster sugar
3 tbsp fresh mint, finely chopped

Method:

Thread the strawberries, papaya and pineapple decoratively onto long wooden skewers. Sprinkle with the lemon juice, caster sugar and mint then chill in the refrigerator before serving.

Use as part of a dessert for a braai or a barbecue meal.

If desired the fruit can be cooked on the barbecue for about 5 minutes, or until lightly coloured before serving. If cooking them, baste with the marinade ingredients frequently.
