Ingredients:
5 tbsp flour
5 tbsp cornflour
2 tbsp milk powder
1 tbsp honey
1 tsp baking powder
1 tbsp icing sugar
1 tbsp butter
1 egg
Method:
Pre-heat your oven to 90C. Line a baking tray and set aside.
In a bowl, cream together the butter and icing sugar until pale and fluffy. Add the honey, powdered milk and egg then beat to combine.
Sift over the cornflour then mix well to combine. Now sift over the flour and baking powder, mixing to incorporate. Turn the resultant dough out onto a lightly-floured work surface and roll out to about 5mm thick.
Cut out rounds with a small biscuit cutter (or even a wine bottle screw cap). Transfer to your lined baking tray. Roll out the scraps and cut out more rounds. Once all the dough has been used up transfer the baking trays to the centre of your pre-heated oven and bake for 15 minutes.
Allow to cool on the baking trays for 15 minutes before transferring to a wire rack to cool completely.
