Mini Crab Cakes: A Fusion recipe for a Thai-inspired starter of crab meat, chilli and breadcrumb cakes that are fried to cook.

Ingredients:

340g tinned crab meat
2 tbsp mayonnaise
finely-grated zest of 2 limes
juice of 2 limes
1 red chilli, finely chopped
60g fresh breadcrumbs
1 tsp fresh coriander, chopped
vegetable oil for frying
lime wedges, to garnish

Method:

Combine the crab meat, mayonnaise, lime zest, lime juice, chilli, breadcrumbs and coriander in a bowl.

Mix thoroughly to combine then shape the mixture into 12 patties. Arrange on a plate, cover with clingfilm (plastic wrap) and set aside to chill for 30 minutes.

Heat a little oil in a frying pan and use this to shallow fry the crab cakes for between 2 and 3 minutes per side, or until golden brown.

Remove and drain on kitchen paper. Serve warm, accompanied the lime wedges and a Sweet Chilli dipping Sauce.
