Mini Blueberry and Lemon Muffins: A British recipe for a classic mini muffin containing lemons and blueberries in the batter.

Ingredients:

250g plain flour
2 tsp baking powder
100g soft light brown sugar
100ml sunflower oil
100ml milk
2 medium eggs, beaten
finely-grated zest of 1 lemon
juice of 1 lemon
50g blueberries

Method:

Sift together the flour and baking powder into a large bowl then stir in the sugar.

Combine the oil, milk, eggs, lemon zest and lemon juice in a bowl and beat thoroughly to combine. Pour this into the flour mix and stir to combine. Add the blueberries and stir until well mixed.

Line the wells of a 12-hole muffin tin with mini cupcake cases. Divide the batter between these then transfer to an oven pre-heated to 180°C and bake for between 25 and 30 minutes, or until well risen, golden brown on top and firm to the touch.

Allow to cool in the tin for 5 minutes then turn out onto a wire rack to cool further.

Serve warm.
