This is a classic French layered dish prepared in ramekins.
Ingredients:
3 eggs
150ml of milk
80g of organic cow's cheese, grated
2 tbsp Chives, snipped
Salt and freshly-ground black pepper, to taste
1 small tsp of nutmeg
10g of butter
1 nice slice of prosciutto (leave out for a vegetarian version), diced or shredded
For the Coulis:
2 tomatoes
Salt and freshly-ground black pepper, to taste
Method:
Beat the three eggs with salt, black pepper and nutmeg. Mix in the grated cheese and the prosciutto.
Add in the chives and mix to combine.
Butter four ramekins, then divide the egg mixture equally between them.
Place the ramekins in a large oven-proof dish. Fill with boiling water to come half way up the ramekins then transfer to an oven pre-heated to 220°C and bake for 20-25 minutes. Ensure that the eggs are fully cooked before removing the ramekins from the oven (a sharp knife inserted into one of the ramekins should emerge cleanly).
For the coulis, simply puree the tomatoes and season to taste. Arrange the coulis on a serving dish and carefully turn out the contents of the ramekins on top. Serve accompanied by a small green salad mixed with grated carrots.
Serve warm.
