Mho Kazun Ywet Kyaw (Stir-fried Water Spinach with Straw Mushrooms) a Classic Myanmar recipe for a vegetarian stir-fry dish of water spinach and straw mudhrooms in a spicy chilli, garlic and soy sauce base.

Ingredients:

450g water spinach
450g straw mushrooms
8 green chillies
4 garlic cloves, finely chopped
4 tbsp light soy sauce
6 tbsp vegetable oil
1 tsp salt (or to taste)
1 tsp sugar

Method:

Wash the water spinach well, pat dry then cut into large pieces. Wipe the straw mushrooms clean, remove any excess stem and halve the caps.

Heat the oil in a pan, add the garlic and fry for about 20 seconds then add the mushrooms, salt and sugar. Cover the pan and cook for 3 minutes then add the water spinach and soy sauce and stir thoroughly to combine.

Cook only until the water spinach leaves have just begin to wilt.

Serve immediately.
