Mentsuyu Sauce

Mentsuyu is a multi-purpose Japanese sauce. It's a very versatile savory sauce that gives many dishes a great Japanese flavor. This is perfect for dipping cold Soba or Somen noodles, tempura and more. The name mentsuyu (麺つゆ) literally means “noodle sauce” in Japanese and is used primarily as a dipping sauce.

Ingredients:

125ml (1/2 cup) Soy Sauce
125ml (1/2 cup) Mirin
125ml (1/2 cup) Sake (Japanese rice wine)
handful of Dried Bonito Flakes

Method:

Combine all the ingredients in a saucepan. Bring to a boil over medium heat and allow to boil for 2 minutes.

Take off the heat and set aside until completely cooled.

Strain to remove the bonito flakes then store in a clean container.
