Melachino (Greek Wedding Cake): A Greek recipe for a spiced sponge cake with a lemon juice sugar glaze that is typically served at weddings.

Ingredients:

For the Cake:
150g butter or margarine
200g sugar
3 eggs
180ml milk
210g plain flour
1/2 tsp ground mace
1 1/4 tsp ground cinnamon
1/2 tsp ground cloves
1 1/2 tsp baking soda
1/4 tsp salt
1 1/2 tbsp fresh lemon juice

For the Glaze:
200g icing sugar
6 tbsp water (about)
1/2 tsp lemon juice

Method:

Cream together the butter and sugar until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.

Sift together the dry ingredients in a bowl then add the flour mixture alternately with the milk to the egg and butter mix.

Stir in the lemon juice, then turn the batter into a greased and lined springform cake tin.

Transfer to the centre of an oven pre-heated to 170°C and bake for about 45 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.

Remove from the oven.

Whilst the cake is baking prepare the glaze. Beat together the icing sugar with the lemon juice then add enough water to give a just drizzleable icing.

Allow the cake to cook in the tin for 10 minutes then turn out onto a wire rack. Sit a plate underneath and drizzle over the glaze whilst the cake is still warm.

For weddings, the cake is traditionally decorated with flowers, as shown in the picture.
