Matzo Meal Biscuits

Ingredients:

35g desiccated coconut
1 tbsp water
140g Matzo meal (this is a traditional kosher wheat meal)
1 tsp vanilla extract
50g brown sugar
60ml fruit jam
65g margarine or butter

Method:

In a bowl beat or rub together the coconut, matzo meal, sugar, margarine, water and vanilla until the dough becomes crumbly and then sticks together when packed. Form compact tablespoon-sized balls from the dough and set these some 5cm apart on ungreased baking trays. Flatten the balls to about 4cm diameter then Place in an oven pre-heated to 170°C and bake for about 20 minutes, or until they're a rich golden brown.

Transfer the biscuits to a wire rack and allow to cool for 3 minutes then press the handle of a wooden spoon into each biscuit to make a depression about 6mm deep. Fill these with about 1/4 tsp jam then allow to cool completely.
