Matsavo (Pumpkin Leaf and Peanut Flour Stew) is a traditional Mozambican recipe for a classic stew of pumpkin leaves and prawns in an onion, peanut flour, tomato and hot chilli base. Ingredients:
5 pumpkin leaves
500g dried or fresh prawns
2 medium tomatoes, chopped
1 medium onion, chopped
300g peanut flour
750ml water
5 hot chillies, chopped
Method:
Remove the central vein from the pumpkin leaves and discard. Wash the leaves then cut the leaves into thirds and shred.
Add the pumpkin leaf pieces to a pot along with the onion, tomato, prawns, chillies, salt, peanut flour and water. Stir well to combine then bring to a simmer and cook gently over low heat for 20 to 25 minutes.
If the mixture is too thick add a little water at this time, if too thin add a little more peanut flour. Stir frequently as the mixture can tend to catch on the base of the pan.
