Matchstick Potatoes is a traditional British recipe for a classic accompaniment of julienned potatoes that are deep fried; essentially thin versions of french fries (chips). The full recipe is presented here and I hope you enjoy this classic British version of: Matchstick Potatoes.

Ingredients:
6 potatoes
oil for deep frying
Method:
Peel the potatoes then julienne them (slice into very small chips [fries] of matchstick size). Place in a bowl of cold water and set aside to soak for 20 minutes (this leaches out excess starch).
Drain then dry well on kitchen paper. Add oil to a deep fryer or wok and heat to 180°C. Add the potatoes and fry for 3 minutes. Remove with a slotted spoon and drain on kitchen paper.
Immediately before serving return the potatoes to the deep fat and fry for a further 3 minutes. Drain and serve immediately.
