Ingredients:
6 tbsp milk
3 tbsp active dry yeast
1 tbsp baking powder
6 tbsp cold water
400g millet flour
vegetable oil for frying
1 tbsp caster sugar
400g brown rice flour
icing sugar for dusting
Method:
Combine the milk and water in a small pan and gently heat. Pour this mixture into a bowl and add the caster sugar. Add the yeast and place in a warm spot until the yeast begins to froth.
Sift the millet flour, rice flour and baking powder together in a large bowl. Add the yeast mixture and mix. Allow to stand in a warm place for some 40 minutes until risen. The mixture should have the consistency of a thick pancake batter by this point.
Add the vegetable oil to a frying pan or wok so that it's about 3 cm deep. Heat on low heat for about 5 minutes then add spoonfuls of the batter and cook for 5 minutes, turning frequently to prevent burning. Drain on paper towels, dust with icing sugar and keep warm.
Serve either as a snack or as an accompaniment to soups.
