Mascarpone Cupcakes with Strawberry Glaze: An American recipe for a strawberry and mascarpone cheese cupcake with a strawberry glaze topping that's based on a white cake mix base.

Ingredients:

240g mascarpone cheese, softened (or use this site's recipe for home-made mascarpone)
2 egg whites
4 tbsp vegetable oil
500g batch of white cake mix
250ml water
60g frozen strawberries, thawed and drained
400g icing sugar

Method:

Mix together the mascarpone cheese, egg whites and vegetable oil in a bowl. Beat the ingredients with a hand whisk until creamy then work in the cake mix and the water.

Beat until smooth then spoon the batter into lined mini muffin tins, filling to just below the rim.

Transfer to an oven pre-heated to 170°C and bake for about 20 minutes, or until nicely risen, golden brown on top and cooked through (a skewer inserted into the centre should emerge cleanly).

Carefully transfer the cupcakes to a wire rack and set aside to cool.

In the meantime, purée the strawberries in a small food processor. Sift the icing sugar into a bowl, add the strawberry purée and whisk into the sugar until smooth and just spreadable.

Top the cooled cupcakes with this strawberry glaze. Allow the glaze to harden for a few minutes before storing or serving.
