Marshmallows

Marshmallows is a traditional British recipe for a classic sweet (candy) made from a blend of gelatine, honey and sugar cooked in water until thickened that's cooled, cut into cubes and stored in an air-tight tin. Ingredients:

45g cornflour
60g icing sugar
1 envelope unflavoured gelatine (7g powdered gelatine)
80ml water
120g granulated sugar
120ml runny honey
pinch of salt
1 tsp vanilla extract

Method:

Sift the cornflour and icing sugar into a bowl. Lightly grease a 22 x 22cm baking pan and sprinkle 1 tbsp of the mixture onto this.

Sprinkle the gelatine into the water, add to a small saucepan and allow to soak for 5 minutes then add the granulated sugar, heat on low heat and cook until the sugar and gelatine dissolve.

Combine the gelatine mixture, the honey, salt and vanilla extract in the bowl of an electric mixer and beat for 15 minutes at high speed (until peaks form). Spread this mixture into the prepared pan and smooth the top. Leave in the refrigerator for 2 hours to set.

After this time cut the mixture into quarters with a knife. Loosen the mixtures around the edges and sprinkle with the remaining cornflour and sugar mix. Invert onto a flat surface then cut each quarter into nine pieces and roll to coat with the cornflour and sugar.

Allow to stand on a wire rack to dry over night then store in an air-tight container (where they will keep for a month).
