Marbled Cupcakes: Classic British recipe for a cupcake of mixed white and chocolate batter decorated with cream cheese icing and caramel condensed milk lines.

Ingredients:

125g butter, softened
125g caster sugar
2 eggs
125g self-raising flour
1 tbsp cocoa powder

For the Topping:
150g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
50g icing sugar, sifted
2 tbsp double cream
caramel-flavoured condensed milk, to drizzle

Method:

Cream together the butter and sugar in a bowl until pale and fluffy. Add the egg, one at a time, beating thoroughly to combine after each addition. Sift in the flour and fold to combine then divide the batter between two bowls. Add the cocoa powder to one bowl and mix to combine.

Line the wells of a 12-hole muffin tin with silicone or paper cases. Drop alternating teaspoonfuls of the two cake mixtures into the cases then, using a skewer, cut through the mixture a few times to marble it. Transfer the cakes to an oven pre-heated to 180°C (350°F, Gas Mark 4) and bake for between 15 and 20 minutes, or until well risen and springy to the touch. Set aside on a wire rack to cool completely.

To decorate, beat together the cream cheese and icing sugar in a bowl until smooth and creamy. Now stir in the cream to yield a smooth frosting.

Spread the frosting over the tops of the cakes then squirt lines of the condensed milk over the top. Either leave these as they are, or draw a skewer through the condensed milk to yield a feathered effect.
