Maori Fry Bread: A New Zealand recipe for a yeasted bread dough served as an accompaniment that's fried in triangles to cook.
Ingredients:
1l water at 43°C
2 tbsp active, dried, yeast
2 dessert spoons sugar
2 tbsp plain flour
950g to 1.2kg plain flour
pinch of salt
1l vegetable oil, lard or dripping for frying
Method:
Mix together the water, yeast, sugar and 2 tbsp flour in a bowl. Cover with a clean cloth and set aside in a warm place for 15 minutes to allow the yeast to activate. At the end of this time, you should have a nice head of froth on the top of the ingredients.
Place 1kg of your flour in a bowl. Add a pinch of salt and stir to combine.
Form a well in the centre, then add the yeast mixture. Gradually work the flour into the liquid ingredients (do this gradually and with a light hand).
When the flour is moistened, begin kneading and adding more flour, as needed. Work the ingredients together to form a fairly soft dough.
Turn the dough out onto a floured board and set aside to rest for 15 minutes.
During this time, heat your oil, lard or dripping in a large pot (you should have a depth of about 5mm). The oil needs to be very hot, so that you can see a haze of blue smoke above it.
Now begin pressing the dough out flat (add more flour if it's sticky) work it to about 1cm thick then cut into shapes (typically triangles or squares). Note that the dough should be nice and risen and fluffy before you cook. If not, knock the dough back, knead and re-roll then leave for 10 minutes more to raise.
Once the dough is ready, cut into shapes then press out about 6mm thick.
Arrange the dough pieces in your hot oil and fry on one side until nicely browned (about 3 minutes). Turn the bread over and fry on the other side until nicely browned.
Serve warm.
