Berreenyn Jastee-hollan (Soda Cakes)

These are a bit more like Irish farls, sodabread cooked on a griddle. Note the use of bicarbonate of soda, which puts the origins of these griddled cakes after 1850. At the time, barley flour would still have been the commonest flour on the Isle of Man, with wheat flour not becoming commonplace until the 1910s. So, how you prepare them will depend on which historical period you are aiming for.

Ingredients:

1.4kg (3 lbs) flour
115g (1/4 lb) lard
1 tsp (heaped) salt
1 teaspoonful bicarbonate of soda
Buttermilk

Method:

Mix all the dry ingredients in a bowl then work in just enough buttermilk to yield a slightly soft (rollable) dough that's not tacky.

Turn out onto a floured work surface, flour your rolling pin and roll the dough out to 6mm (1/4 in) thick. Take a cutter and cut out rounds from the dough (you can re-roll the scraps and cut out more rounds).

Heat a griddle or large non-stick frying pan over medium heat. Add the first batch of soda cakes and cook until risen and lightly browned. At this point, flip them over and cook on the other side until lightly browned.

Transfer to a warmed plate as you cook then next batch. Serve warm with butter.
