Mango Sorbet: A British recipe for a sorbet (frozen fruit juice dessert) made with mangoes, orange juice and lime zest with white wine to prevent crystallization.
Ingredients:
4 firm and ripe mangoes
120ml water
Juice of 2 limes
Grated
zest of 1 lime
Juice of 3 large oranges
120ml white wine
Method:
Peel and cut the mangoes into chunks (save the inner juice in the hollow of the seed if possible, and add to the chunks). Add the mango chunks and juice to a blender along with the lime juice, grated lime zest, wine, water and orange juice until it forms a smooth paste.
Pour the mixture into a lidded container and place in the freezer until softly set. Remove from the freezer at this point and beat till smooth, but do not allow to melt. Return the container to the freezer and allow to refreeze. Beat again, and return to freezer, repeating the process until well set.
Serve scoops of the sorbet garnished with canned cherries or small mango pieces or fruit cocktail.
