Ingredients:
2 large mangoes
80g sugar
1 tbsp lemon juice
Method:
Wash and peel the mangoes then cut into slices and then cubes. Place these in a saucepan along with the lemon juice and sugar. Bring the mixture to a boil then reduce to a low simmer and cook for 30 minutes. Stir occasionally with a large spoon and every now and then mash the mango against the side of the pan. The mixture should be thick (about the consistency of apple sauce) when it's removed from the heat. Mash to the desired consistency and serve.
This has many uses, just like apple sauce. It can be used as a pie filling, a dessert in its own right or as an accompaniment to barbecued, grilled or roasted meat. I like to add a few finely-diced hot chillies before serving as dipping sauce for fish or pork kebabs.
