Mango Coconut Ladoo a Classic Anglo-Indian recipe for a sweet or candy made from a blend of coconut, mango pulp and sugar that's cooked until it thickens before being shaped into balls, and which is a traditional snack or treat for Diwali.

Ingredients:

200g shredded coconut
125g mango pulp
4 tsp sugar
pinch of ground cinnamon
1 tsp ghee
water

Method:

Mix the sugar and 2 tsp eater in a small pan. Heat gently until the sugar dissolves to form a simple syrup. Continue cooking, stirring constantly, until the syrup thickens, then stir in the coconut and continue cooking, stirring constantly, over low heat for 10 minutes more.

Add the mango pulp, increase the heat slightly and continue cooking for 5 minutes more. Take off the heat and allow to cool slightly.

Whilst the mixture is still warm, form small rounds on a greased baking tray (do not allow the mixture to cool, or you will not be able to mound it).

Set aside to cool completely, then transfer to an air-tight tin. It will keep for several days.
