Mango Atchar is a traditional South African recipe for a classic condiment of mangoes and spices with honey and balsamic vinegar thickened with cornflour (cornstarch). The full recipe is presented here and I hope you enjoy this classic Southern African version of: Mango Atchar.

Atchar derives from the Indian influence on South African cuisine. In Hindi it is spelled Achar, a word that means 'pickle'.
Add all the ingredients (except the mangoes and oil) to a large pot. Bring to a simmer and cook until the mixture thickens then add the mangoes and oil and mix well to coat.
Allow to cool and refrigerate for at least 12 hours before using.
