Ingredients:
1 kg cassava tubers
1 tsp salt
palm oil for frying
Method:
Peel the cassava root and cut into 8cm chunks. Add to a pot and cover with salted water. Bring to a boil, reduce to a simmer and cook for 15 minutes. Remove the cassava from the pot and allow to cool. Add the palm oil to a deep frying pan until 3cm deep then cut the cassava pieces lengthways in half and slice into wedges.
