Malpua (Sweet Indian Pancakes)

This is a classic Indian dessert of soft and spongy pancakes soaked in saffron and cardamom flavoured sugar syrup before being served.

Ingredients:

For the Pancake:
375ml (1 1/2 cups) fresh milk
90g (3/4 cup) plain (all purpose) flour
35g (1/4 cup) semolina
50g khoya/mawa, grated
1/4 tsp baking powder
1/4 tsp ground cardamom
1 tbsp granulated sugar
1/2 tsp ground fennel seeds
5 tbsp ghee/clarified butter

For the Sugar Syrup:
200g (1 cup) granulated sugar
125ml (1/2 cup) water
5-6 saffron strands
3 cardamom pods, crushed

Method:

For Sugar Syrup: In a pan, combine the sugar, water add crushed cardamom pods. Bring to a boil and continue boiling over high heat for 9-10 minutes. Take off the heat and add the saffron strands, stirring gently to combine. Take off the heat and set aside.

For The Malpua: In a bowl mix together the flour, semolina, khoya, baking powder, sugar,ground fennel seeds, ground cardamom and milk. Whisk until there are no lumps, the batter should be of the same thickness as a standard pancake batter. Cover with clingfilm (plastic wrap) and rest the batter for 15-20 minutes.

Set a frying pan over a medium heat. Once hot add the ghee/clarified butter. When foaming drop in a ladleful of the batter and fry the malpuas for 2-3 minutes on one side. Flip the malpuas and fry for another minute or until golden brown in colour.

Transfer the hot malpuas into the warm sugar syrup and soak them for 8-10 minutes.

Remove from sugar syrup and serve warm.
