Malian Simbala Powder

Malian Simbala Powder is a traditional Malian recipe for a classic blend of hot chilli powder and dried garlic used ubiquitously as a flavouring that is also sometimes mixed with salt and black pepper. Though the name is not Malian in origin (it's Filipino), the blend of dried garlic and dried chilli found in Asian cookery is also commonly used in Malian cookery, hence its inclusion here. In Mali the mixture is commonly called 'spice' and as the term simbala powder is more familiar and descriptive, I will use this name here.

Ingredients:

2 tbsp dried garlic, coarsely ground
2 tbsp hot chilli powder

Method:

Simply combine the ingredients in a bowl and turn into an air-tight jar. Sore in a cool, dark, cupboard until needed. It will keep for several weeks.

Some Malian cooks make this into a general-purpose seasoning by adding 1 tbsp salt and 1 tbsp ground black pepper to the mix.
