Maitrank (May-drink)

This is a classic drink of the Arlon region of Luxembourg that actually originated with the monks of Prüm, Germany in 840 CE. Like many German-influenced 'May' drinks it uses sweet woodruff as a flavouring ingredient.

Ingredients:

1l of Riesling white wine
500ml Champagne Cognac
500g sugar cubes
3 oranges, sliced
1 lemon, sliced
1 bunch of sweet woodruff leaves (pick the leaves in early May, before the plant flowers)

Method:

Combine the ingredients in an earthenware pot and macerate with a potato masher. Cover and set aside to marinate for 48 hours.

After this time pour through a fine-meshed sieve then pour into bottles, stopper and keep until needed.

To serve, chill in the refrigerator and flavour with a slice of orange. Typically it's served in a glass with a splash of ice-cold champagne.
