Maitohorsmia Hytelö (Fireweed Jelly)

Ingredients:

2l fireweed blossoms
60ml lime juice
1.25l water
2 packets of powdered pectin
1kg sugar

Method:

Remove the flowers from the stems then wash the blossoms. Place in a large pan with the lime juice and water then bring to a boil and continue boiling for 10 minutes, stirring occasionally, until the colour has been leached from the flowers.

Take off the heat then strain the liquid into a pan (discard the flowers). Add the pectin and bring the mixture to a boil then stir in the sugar until dissolved. Continue boiling for 1 minute then take off the heat and pour into sterilized jars that have been warmed in the oven.

Seal the lids tightly and set aside until completely cooled. Store in a cool cupboard until needed.
