Mancarra with Citi (Chicken with Peanuts and Palm Oil)
Mancarra with Citi (Chicken with Peanuts and Palm Oil) is a traditional Guinea-Bissau recipe for a classic stew of stew of chicken with onions in a tomato and crushed peanut sauce flavoured with chillies and palm oil. Ingredients:
1 chicken, cut into serving-sized pieces
1 large onion, chopped
2 large tomatoes, diced
300g peanuts, crushed in a pestle and mortar
50ml palm oil
salt to taste
2 red chillies, chopped
Method:
Season the chicken with salt and chilli then set aside. Meanwhile fry the onion in the palm oil and when soft add the chicken and fry until browned. Add the crushed peanuts and tomatoes to the chicken then add enough water to just cover and mix well.
Bring the mixture to a boil reduce to a simmer and cook until the chicken is tender (about 40 minutes). Serve on a bed of rice.
