Lourenço Marques Prawns

Lourenço Marques Prawns is a traditional South African recipe for grilled prawns marinated in olive oil, chillies, lemon juice, garlic, onions and coriander that's served with a sauce made of those ingredients. Lourenço Marques was the former name of the capital city of Mozambique now known as Maputo. LM Prawns, as they are more colloquially known became a favourite of South Africans visiting Mozambique and few South African restaurant menus are complete without this dish.

Ingredients:

12 tiger prawns, shelled and de-veined but with the tails still on
3 tbsp olive oil
2 piri-piri chillies, chopped
juice of 1 lemon
1 garlic clove, minced
1 onion, finely chopped
1 tbsp chopped coriander leaves
2 pinches salt

Method:

Mix all the ingredients (except prawns) together in a glass bowl. Pour half the mix into a separate bowl to use as a sauce then add the prawns to the sauce remaining in the original bowl. Toss the prawns gently to ensure they are coated and allow to marinate for at least two hours.

Remove the prawns and set aside. Meanwhile pour the used marinade into a pan and bring to the boil. Thread the prawns on skewers and cook on a charcoal barbecue, basting frequently with the cooked marinade and turning once (you can also cook under a grill). Serve immediately with the reserved marinade as a dipping sauce.
