Lopo (Fried Summer Squash and Greens)

Lopo (Fried Summer Squash and Greens) is a traditional Lesothan recipe for a dish of fried summer squash greens cooked with unripe summer squashes that is a typical season vegetable accompaniment to most dishes from Lesotho. Lopo is a classic version of Lesothan moroho (fried greens) that’s made from a blend of summer squash leaves and unripe summer squashes.

Ingredients:

600g summer squash leaves
300g unripe summer squashes
4 tbsp oil
Salt, to taste

Method:

Wash the greens, slice off any small thorns (discard these) then coarsely chop the leaves. Remove the stems from the summer squashes then chop them coarsely (no need to peel or remove the seeds as these are edible).

Heat your wok or pan over medium heat. Add the oil and when hot use to stir-fry the greens and squashes until the greens are wilted and the squashes are piping hot through.

Season to taste with salt and serve.
