Lonumirus (Maldives Chilli Sambal)

This is a chilli curry sambal from the Maldives that is used both as a flavouring for curries and as a spicy accompaniment. It is also served by itself with rice for a light meal.
Ingredients:
1 small onion, sliced roughly
8 garlic cloves, coarsely chopped
15 curry leaves
1 tsp whole cumin seeds
½ tsp whole black peppercorns
16 dried red chillies (or to taste)
4 tbsp grated coconut
1 ½ tsp lime juice (or to taste)
½ tsp salt (or to taste)
Method:
Place a wok or pan over medium-low heat. Once hot add the grated coconut and stir-fry until the coconut takes on a light brown colour. Keep the heat at low to medium throughout the process and when the coconut takes on the light brown colour remove it from the pan and transfer to a plate.
Combine the onion, garlic, salt and curry leaves in a grinder and grind until until you have a smooth paste.
Add all the remaining ingredients to the grinder (except the lime) and grind until the mixture becomes smooth. You can add a little water if you think the mixture is too dry (about a teaspoon should be enough).
Add lime juice and grind for a couple of seconds to incorporate and your lonumirus is done.
