Linden Lemonade

Linden Lemonade is a traditional British recipe for a classic drink made from linden (European lime) flowers, lemons and fruit vinegar sweetened with sugar that is lightly fermented. The full recipe is presented here and I hope you enjoy this classic British version of: Linden Lemonade.

Ingredients:

4l water
150g linden blossoms
1 unwaxed lemon cut into thin slices
50ml fruit vinegar
450g sugar (or to taste)
1 small crust of Breads spread with a little yeast

Method:

Add the water to a pan, bring to a boil and immediately take off the heat. Place the linden blossoms, fruit vinegar, sugar and lemon slices in an earthenware bowl. Pour over the hot water and stir until the sugar has dissolved. Allow to cool until lukewarm and float the bread crust on the top. Cover with a clean cloth and set aside to macerate at room temperature for between 4 and 5 days, or until the surface of the lemonade is foaming slightly. During this period, stir once or twice a day to aid the infusion.

When the mixture is ready strain through muslin then bottle (this will ferment slightly, so it's best to use flip-top bottles or bottles you can stopper securely). Place in the refrigerator and consume within ten days. Be careful when opening, as the lemonade is slightly fizzy.
