The flowers of the Linden (common lime) tree are very highly scented and make a delicious tea when dried.

Method:

Pick young flowers just above the wing-like bract (leave older flowers behind as these may have a narcotic effect).

Spread the freshly-picked flowers out on trays and leave for two weeks in a warm airy room to dry completely. Store in an air-tight jar until needed.

To use, take a handful of the flowers, pour hot water over the top and allow to steep just like tea. Either use a cafetiére or strain the tea through a strainer and serve.
