Linden Blossom Tea

Linden Blossom Tea is a traditional British recipe (based on a French original) for a classic drink of linden blossoms (flowers) infused in boiling water. Method:

Gather the flowers in late June or early July when then they are in full bloom. Arrange on a tray or sheet of cardboard lined with foil and set in the sun in a well-ventilated room. After about two weeks they will have dried out and turned brittle. At this stage they can be used.

To make a tea warm a pot, place about 3 tbsp dried linden blossoms in it, cover with boiling water and set aside to infuse. After about 8 to 10 minutes it will be ready to drink. Simply pour into a cup (do not add milk) and enjoy this beautifully coloured tisane. It's best to experiment with strengths until you find the tea style you prefer. I've also found it mixes well with green teas.

This is a good tea to have before going to bed as the linden blossoms have a mild sedative effect.
