This is an excellent way of capturing the colour and flavour of lilac flowers for use in winter. The method of preparation is similar to that used for vanilla sugar.
Remove and discard all stems and any errant leaves from the lilac flowers.
Combine the sugar and just over half the lilac flowers in a food processor. Pulse to chop the flowers and blend with the sugar. The sugar itself should turn a pale lilac.
Tip into a bowl then mix in the remaining lilac flowers. Spoon the mixture into a jar, seal and store. You should set aside for about a week for the flavours to strengthen before using.
