Lilac Rice Pudding

Lilac has a wonderful floral aroma and makes an excellent substitute for rose petals in this North African inspired rice pudding. Note that the stems of lilac flowers are bitter, so you want to pull the individual flowers from the stems and use the flowers only.

Ingredients:

1l (4 cups) milk
375g (1 1/2 cups) cooked short-grain rice
4 tbsp honey (or to taste)
3 tbsp cornflour (cornstarch)
1 tbsp vanilla extract
15g (1 cup) lilac blossoms

Method:

Whisk together the milk, honey and cornflour in a saucepan. Add the rice and whisk to combine.

Place over medium heat and bring to a gentle simmer. Reduce the heat to medium low and cook for about 10 minutes, stirring frequently to prevent sticking and scorching. At this point, the mixture should be thick enough to coat the back of a spoon.

Now stir in the lilac blossoms and the vanilla extract. Mix well to combine and cook gently for 2 minutes more.

Take off the heat then pour into a serving dish. Allow to cool then transfer to your refrigerator and chill for at least 60 minutes (it will thicken further during this time).

Serve chilled.
