Libyan Camel Meatballs

Libya is the home of camel meat based recipes and this is a classic recipe for a camel based meatball which can be served as a snack or as part of a tagine.

Ingredients:

500g minced camel meat (include a little of the hump to prevent this mixture from becoming too lean)
200g cubed day-old firm white bread
250ml milk
1 egg, beaten
1/2 tsp salt
¼ tsp freshly-ground black pepper
4 garlic cloves, minced
⅛ tsp grated nutmeg
1 tsp ground ginger
1 tsp turmeric
2 tsp paprika
¼ tsp cayenne pepper
¼ tsp ground cloves
¼ tsp ground coriander seeds
½ tsp ground cumin
3 tbsp chopped parsley
3 tbsp chopped coriander leaves
3 tbsp finely chopped spring onions
plain flour, for dusting
Olive oil or vegetable oil, for frying

Method:

Pre-heat your oven to 200°C. Soak the bread in the milk for 10 minutes then squeeze out the excess liquid.

In a bowl, combine the squeezed bread, minced meat and eggs. Add the salt, black pepper, garlic, nutmeg, ginger, turmeric, paprika, cayenne, cloves, coriander and cumin. Mix well with your hands to evenly distribute the seasoning.

Add 2 tbsp each of parsley, coriander and spring onions, then knead together the ingredients for a minute. (If pressed for time, this mixture may be prepared several hours in advance, up to a day.) Now, using your hands, roll the mixture into small round balls about 2cm in diameter.

Dust the resultant balls lightly with flour. Heat a few tablespoons of oil in a frying pan over medium-high heat and use to fry the meatballs until just browned (about 2 minutes per side).

Transfer the meatballs in a baking dish, place in your pre-heated oven and bake for 15 minutes. Transfer to a serving dish, insert a toothpick and serve with a spicy table harissa sauce.
