Ingredients:
700g plain flour
300g grated cassava
1 tsp salt
15g yeast
1 beaten egg
pinch of salt
3 tbsp melted butter
120ml lukewarm milk
120ml lukewarm water
80g granulated sugar
100g grated coconut
a few drops vanilla extract
Method:
Add the yeast and 1 tsp sugar to the water and allow to stand and rise. Meanwhile, add the salt, melted butter, and egg to the lukewarm milk. Add the flour, coconut, sugar, vanilla and cassava to the milk mixture and stir-in well. Finally add the yeast mixture and stir.
Knead the resultant dough until smooth and elastic. Shape as desired and put in a tin greased with butter and allow to rise until it has doubled in size. Place in an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for about 20–30 mins, until golden brown and cooked through. Serve thick slices with butter or honey as an accompaniment to coffee or tea.
