Lemóni pshtó patátes (Greek Lemony Roasted Potatoes): A Greek recipe for an accompaniment of potatoes roasted with lemon juice, olive oil, garlic, oregano and seasonings.
Ingredients:
1.5kg medium roasting potatoes, scrubbed and peeled, but left whole
250ml water
120ml lemon juice
80ml extra-virgin olive oil
3 garlic cloves, minced
1 tsp sea salt
2 tsp dried oregano, crumbled
1 tsp freshly-ground black pepper
Method:
In a bowl, mix together the water, lemon juice, garlic, salt and oregano.
Arrange the potatoes in a baking dish then pour over the liquid. Transfer to an oven pre-heated to 160°C and bake for 30 minutes before turning the potatoes over.
Continue cooking for 30 minutes, then turn the potatoes over and cook for 30 minutes more. Continue this process about 4 times, or until the potatoes are cooked through and the liquid has reduced to a sauce.
Serve the potatoes topped with a generous spoonful of the sauce reduction.
These are excellent if served with roast meats — particularly lamb and chicken.
