Lemon Surprise Pudding

This is a classic British sponge-based pudding that is as tasty as it is to make. The surprise in the pudding being the tangy sauce that is concealed by the sponge topping.
Ingredients:
50g butter
finely-grated zest of 2 lemons
115g caster sugar
juice of 2 lemons
2 eggs, separated
50g self-raising flour
300ml milk
Method:
Cream together the butter, lemon zest and caster sugar in a bowl until pale and fluffy. Add the egg yolks, one at a time, beating thoroughly to combine after each addition then sift over the flour and fold in to combine.
Gradually whisk in the lemon juice and milk (do not worry when the mixture curdles, this is meant to happen).
Beat the egg whites in a clean and dry bowl until fairly stiff then fold into the batter with a metal spoon. Grease a 1.2l baking dish with butter and pour the batter into this.
Sit the dish in a roasting tin and pour in enough hot water to come half way up the sides of the dish. Transfer to an oven pre-heated to 190°C and bake for 45 minutes, or until the sponge topping is golden brown and springy to the touch.
Serve hot accompanied by cream, custard or lemon sauce.
