Also known as mawa this highly-condensed milk forms the basis of numerous Indian and Pakistani sweets and desserts. It is quite versatile, can be made well in advance, and can be stored in the refrigerator or freezer.

Ingredients:

1.2l milk
juice of 2 lemons

Method:

Add the milk to a large, heavy-based saucepan and bring to a boil. Reduce to a simmer, stir in the lemon juice, and keep cooking, stirring constantly, until the milk begins to thicken.

Now being stirring more vigourously and continue cooking until the milk has reduced to a thick, dry, lump and the mixture has stopped sizzling.

Remove from the pan, turn into a bowl and set aside to cool. Sore in the refrigerator and use within a fortnight.

For plain khoya, omit the lemon juice.
