Lebanese Sabaa Baharat

The basic seven spices for Lebanese Baharat (sabaa baharat) are allspice, cinnamon, nutmeg, cumin, coriander, cloves and black pepper. This is the foundation of baharat spice, however, ginger and green cardamom seeds may be added, too.

Ingredients:

1 medium-size cinnamon stick
1 whole nutmeg, quartered
1 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp whole cloves
1 tsp allspice berries
1/2 tbsp black peppercorns

Method:

Separately toast the whole spices for about 90 seconds each, or until aromatic. As you finish toasting turn out onto a plate and allow to cool.

Once the spices have cooled, mix them in a clean spice or coffee grinder. Pulse to chop then run the motor to render to a fine powder.

Transfer the spice powder to a lidded jar and store until needed.

You can also add 1 tbsp ground ginger and 2 tsp green cardamom seeds to the mixture as a variant.
