Ingredients:
500ml good quality vinegar (cider, white wine, rice wine or white balsamic vinegar)
600ml lavender flowers
Method:
Trim the stems of the lavender flowers, place in a large jar then pour over the vinegar. Seal securely then put aside in a refrigerator and allow to infuse for 1 week.
Taste the vinegar and if the flavour is strong enough for your liking strain and bottle. If you would prefer a stronger flavour set aside to infuse for 3 days more then taste again.
