Ingredients:
1.2l water
35g lavender flowers, stripped from their stems
80ml freshly-squeezed lemon juice
100g granulated sugar (or to taste)
mint leaves, to garnish
Method:
Add 250ml of the water to a pan and bring to a boil. Take off the heat, stir in the lavender flowers then cover the pan and set aside to steep for 10 minutes. Pour the resultant liquid through a fine-meshed sieve (discard the blossoms) then set the lavender infusion inside.
Meanwhile, combine the lemon juice with the remaining water in a 1.5l jug. Stir in sugar to taste then add the prepared lavender infusion. Refrigerate for at least 2 hours, or until chilled. Serve over ice cubes in tall glasses and decorate with a sprig of mint.
