Lamb with Mango and Chilli: Classic Fusion recipe for a barbecue dish of lamb chump chops with a mango chutney and chilli sauce glaze that's served with a fresh spicy mango relish.

Ingredients:

4 lamb chump chops
4 tbsp mango chutney
2 tsp chilli sauce

For the Spicy Mango Relish:
1 ripe mango
2 tbsp cider vinegar
2 tbsp light muscovado sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger

grilled vegetables, to serve
flat-leaf parsley, to garnish

Method:

For the mango relish, slice the mango lengthways down both sides of the large, flat, stone. Peel the mango and cut the flesh into even-sized chunks.

Place the cider vinegar, sugar, cinnamon and ginger in a small pan and heat gently, stirring constantly, until the sugar dissolves. Stir the mango into this mixture and cook gently at the side of your barbecue or on the hob for about 5 minutes, or until the mango is soft.

Oil your barbecue's grill rack and place the chops on this. Cook over hot coals for 4 minutes on each side. Combine the mango chutney and chilli sauce in a small bowl. Brush this glaze over the chops then continue to barbecue for a few minutes more on each side, or until the lamb is cooked; turning and basting frequently with the mango chutney and chilli glaze.

Serve garnished with flat-leaf parsley and accompanied by grilled vegetables and the spicy mango relish.
