Kuindiong (South Sudanese Semolina Pudding) is a traditional South Sudanese recipe for a classic semolina pudding made with fried yoghurt topping known as miok served on top of a yoghurt, milk and semolina mixture known as kuindiong. Kuindiong is a South Sudanese semolina pudding made with fried yoghurt topping known as miok served on top of a yoghurt, milk and semolina mixture known as kuindiong.
Ingredients:
For the Kuindiong:
1l (4 cups) Water
500g (2 cups) Natural Greek Yoghurt
250ml (1 cup) Milk
250g (2 cups) Fine Semolina
300g (1 ½ cups) Sugar
For the Miok:
500g (2 1/2 cups) Butter (or ghee)
560g (2 1/4 cups) Yogurt
Method:
For the Miok: Melt the butter in a small pan over medium-high heat. Once hot stir in the yoghurt and bring to a boil, stirring constantly, then continue cooking for 20 minutes until the oil separates.
Immediately take off the heat and set aside.
For the Kuindiong: Bring 1l (4 cups) water to boil in a large pan. Slowly stir in the yoghurt. Reduce the heat to low and slowly add in the semolina whilst stirring constantly. Keep cooking and stirring constantly until the mixture thickens then beat in the milk and sugar.
Continue cooking for 1-2 minutes then add 2 tsp of the miok. Take off the heat and serve hot or warm in a bowl or dessert glass. Add miok as a topping.
