These crispy krill cakes are a fantastic dinner accompaniment option, starter, or snack, paired with a tangy yogurt dipping sauce.
Ingredients:
200g steamed krill meat
200g mashed sweet potato
30g (4 tbsp, level) breadcrumbs
1 egg
2 tbsp spring onions or Welsh onions [branching onions], finely chopped
1 tsp smoked paprika
Salt and freshly-ground black pepper, to taste
2 tbsp olive oil, for frying
Method:
Mix together the krill meat and mashed sweet potato in a bowl until well combined then mix in the breadcrumbs, egg, spring onions and paprika. Season to taste with salt and freshly-ground black pepper.
Shape the resultant mixture into small patties (about 8) and arrange on a floured plate.
Heat the olive oil in a small frying pan over medium heat. Once hot add the patties and fry for about 3–4 minutes on each side until golden brown and cooked through.
