Kransekage Stænger (Danish Almond Sticks)

Kransekage Stænger (Danish Almond Sticks) is a traditional Danish recipe for a classic biscuit of a ground almond, caster sugar and egg white paste that's shaped into sticks, baked, topped with icing sugar and allowed to harden and cool before serving. Ingredients:

600g ground almonds
550g caster sugar
6 egg whites (200ml in total)

Method:

Combine the almonds and sugar in a saucepan then work in the egg whites. Place on low heat and cook, stirring constantly, until your have a thick paste. Take off the heat and set aside to cool.

Divide the paste into three equal portions. Take the first of these and roll out to a sausage on a lightly-floured work surface. Then repeat with the remaining paste portions. Divide each sausage into ten equal lengths and roll each one into a ball. Now, take each ball in turn and roll into sausage shapes about 7cm in length. Arrange these on baking trays lined with greaseproof (waxed) paper.

Transfer to an oven pre-heated to 180°C and bake for about 9 minutes, or until golden brown. Remove from the oven and make a thick icing with icing sugar, water and lemon juice. Pipe this in a wavy pattern along the length of each biscuit.

Allow the icing to harden before serving.
