Koliko is the Togolese version of fried yam, a staple accompaniment.
Ingredients:
1kg yam
oil for frying
Method:
Peel and wash the yam, cut into slices about 1cm thick then cut each slice into diamond shapes.
Heat oil to a depth of about 1cm in a deep pan, add the yam pieces (do not over-crowd the pan) and fry for about 5 minutes per side, or until golden brown in colour and cooked through.
Drain the yams on kitchen paper and serve either as a snack with a tomato-based sauce or as an accompaniment.
