Kokam Aloo (Kokam Potatoes)

This dish is based on a Marathi original, is very easy to make (and very tasty!).

Ingredients:

8–10 small potatoes
4–5 pieces of kokam (mangosteen)
1 tbsp whole coriander seeds
5 garlic cloves, crushed
1/2 tbsp red chilli powder
1/3 tbsp cumin seeds
2–3 tbsp oil
salt to taste

Method:

Begin by dry-frying the coriander and cumin in a pan. When the spices begin to colour and release their aroma (about 2 minutes) transfer to a pestle and mortar or a coffee grinder along with the kokam and render to a fine powder. Mix with the other spices and the garlic in a bowl.

Meanwhile quarter the potatoes and place in boiling, salted, water. Cook until just soft and take out of the water (about 10 minutes). Drain and set aside. Heat the oil in a frying pan and add the spice blend. Fry for about a minute then add the potatoes. Fry for another five minutes (until the potatoes colour) then serve immediately.
